Challenge
The instant tea market is dominated by low-cost products aimed at tea dispensers. We sought to develop of delicious instant green tea through value creation.
Instant tea is the mainstay product among Nikken Foods powdered beverages. Although many such products are aimed at tea dispensers, there is a recent trend toward increasingly affordable products of higher quality.
Nikken Foods decided to break free of the intense price wars to develop a genuine, premium instant tea that was unquestionably delicious. If the resulting product approached the flavor of tea brewed in a teapot, it should differentiate itself from run-of-the-mill offerings.

Insisting on fine tea leaves from Shizuoka prefecture, described as Japan's leading tea production area
Given the simplicity of the raw material, impeccable selection for instant tea is of utmost importance. As premium green tea leaves promising quality flavor and aroma have high water retention, they are not suited for use in production. The team selected leaves that maintained the ideal flavor and aroma yet drained swiftly. Combining multiple types of raw leaves, they were able to achieve a perfect balance between quality and manufacturing suitability.
With green tea from Shizuoka prefecture as the raw material, extraction was performed at low temperature. The extracted product was pulverized, and additional crushed tea leaves were added during the granulation process to yield a luxurious instant tea presenting just the right umami and astringency.
Results
The flavor of brewed tea in handy instant tea!
The resulting product was an instant green tea requiring only hot water yet created the flavor of a genuinely brewed beverage.
Clients sampling the product at headquarters and trade shows raved-as we hoped- that it was "delicious and tastes like tea brewed in a teapot!" Some requested that we develop similar "limited-edition" products using their own companies' tea leaves.
