Challenge
How does one create natural crab flavor? We sought to develop a seasoning that offered the most delicious crab umami possible.

The quest was to create a crustacean extract from shrimp and crab for flavor enhancement in commercial bisques and creamy croquettes. Our clients voiced a need for the authentic flavor missing in general seasonings.

Crab delectability is concentrated in the flesh and tomalley! Creating a seasoning base from fermented whole crabs...

The flavor of shells is characteristic of typical crustacean extracts. While they are key factors in achieving overall balance, crab meat and tomalley are determinants of crab delectability. Using procurement skills accumulated over the years of Nikken Foods history, we began by searching for ingredients from raw material manufacturers in our quest for optimal taste. Using carefully selected raw materials, whole crabs were salted, fermented, and aged. On occasions when fermentation did not proceed as planned, our team members travelled to overseas plants for exhaustive consideration of elements such as temperature control and salt content. We started by making the raw materials key to production of crab sauce, and then tweaked it with a combination of other ingredients. The result is a successfully commercialized crab sauce, a delicious and versatile seasoning.

Development of an authentic seasoning imparting the luxurious flavor and delectability inherent in crab

Fully concentrating natural crab umami, Nikken Foods created a rich crab-paste seasoning capturing the sweetness of crab meat and the smooth umami of tomalley. A fermented seasoning, crab sauce imparts the umami of fermentation in addition to crab flavoring for a unified taste. Clients happily comment on the strong, concentrated seafood flavor and the sweetness of crab, and employ the product in foods from creamy crab croquettes to ramen and "shumai" dumplings. The seasoning is available in powder and paste forms.
